A very lovely chocolate fudge cake

Well today we’ve opened up the old Cadbury’s cookbook again. Last time I did that was for World Chocolate Day and I made the chocolate covered gingerbread from the front cover of the book.

Today I have delved further I to the book, into the cake section, and I’m making a chocolate fudge cake!

Now I made it in a ring tin because that’s what the book says, but halved the recipe because my tin was smaller than the one the book specifies. I just did the all in one method too for minimal washing up!

When it came out of the tin it looked a bit like a life belt… I had greased the tin but also decided to put four bits of greaseproof paper in, to help get the cake out in case it got stuck. Not a massive problem as I was about to make some chocolate fudge icing to cover it with!

I actually found the icing a little bit difficult to work with at first; when I spread it on the cake it began to lift off some of the actual cake. That’s a problem that’s pretty easy to solve though, I just added more milk until it was at a more spreadable consistency but would still hold its shape.

The cake in the book is decorated with walnuts, but it’s summer (although of course it’s raining as I’m writing this) So I say; why would you decorate with walnuts when you can decorate with summer fruit?! Which is what I did 🙂

Even though I only made half the cake, I still made the same amount of buttercream to make sure I got good coverage. I actually did use most of it because I cut the cake in half and put some in the middle. I think if I’d made the cake it’s normal size instead of making half, it still would have worked but maybe the icing would perhaps have been a tad thinner than it was on this…

This might have been the easiest cake I’ve ever made, but I do think that with the fruit on top, it looks like I made a lot more effort than I did.

I know this is only the second recipe I’ve tried from this book, but both of them have been really easy with decent results. So I think I will keep testing because so far I would say if you’re looking for a book with easy, chocolate-based recipes, I don’t think you can go wrong.

Maybe it’s my fault for testing easy recipes? I don’t know, but let’s find out and carry on going through the book until my dentist tells me to stop.
