Then this blog is probably for you as these are Pina Colada cupcakes that I made on a rainy day! A rainy day while I was in lockdown.
Iāve been feeling a bit up and down recently due to lockdown, but after speaking to several people I think thatās pretty normal at the moment.
The other night when I couldnāt concentrate on reading a book or watching a movie (and thatās saying something because Iāve just got Disney+ and itās the best thing thatās ever happened to me), I decided to make some cupcakes.

Ho ho ho and Happy Easter. I hope everyone managed to have a nice long weekend despite the strange situation we currently find ourselves in.
I decided to cheer myself up and make Easter Bunny cupcakes! I had seen these when googling ‘Easter cakes’, and I thought they looked adorable.
Well this is a weird time for everyone isnāt it. I, like many people, have been socially distancing/self isolating for quite a while now, and now in the UK we are in lockdown.
Iāve been working from home since the 17th of March. Itās safe to say the novelty has worn off now and Iām running out of things to do in the evenings. There is only so much Netflix one person can watch – although everyone’s talking about Tiger King, so that’s one I might start watching.
As well all know, everyone bought all the food, because they were worried about all this. I’ve been wanting to do some baking, but I couldn’t because until a couple of days ago I couldn’t get hold of any eggs. Ā

It was Christmas Eve babe, in the drunk tank kitchen…
And I made snowman cupcakes!
Yes I was baking away on Christmas Eve, because why not?
I’ve been at home for Christmas, eating too much and doing some baking, and it’s been very nice.
And just like that, we’ve made it to part two of the gingerbread series – a day I’m sure many of us thought would never come.
I’m still deciding whether or not this will be a three-part series. If you haven’t read part one, please do pop over here and have a read about my gingerbread stars.
This blog is all about gingerbread cupcakes! Which I am making because I have some adorable gingerbread man sprinkles!
It’s more cupcakes on the blog this week! This week we’re baking from the Hummingbird Bakery’s ‘Cake Days’, and the recipe for these cupcakes comes from the Christmas section.
This is one of this recipes where a lot happened. There were ups, there were downs, there was a peppermint essence infused headache. Also Iām not a huge fan of candy canes to be honest, but they seem to be synonymous with Christmas.
I have a colleague whoās a vegan. I also have a vegan cookbook!
Iāve used the book before and itās great but Iāve only made the soups from it, and not ventured into the sweet section.
My colleague canāt eat the other things I take into the office, so I decided to make something she could enjoy when I found the banana and chocolate chip cookie recipe.
**Bonus Christmas content alert that isn’t really Christmas content but there is a Santa emoji on the main picture so it still counts!**
On a whim one day, when looking through my Hummingbird Bakery Cake Days book (which has been, and will be, featured a lot during my Christmas content), I stumbled across a recipe for apple streusel cake.
I think this was one of those days where I wanted to make a cake to take to work, but I wanted something quite straightforward that wouldn’t take hours and didn’t need decorating.
I liked it because it looked a bit like apple crumble, and I don’t think you can go wrong with apple crumble.
Welcome to another mini-series on the blog. My previous track record with this kind of thing isn’t great – I didn’t ever finish ‘cooking from my calendar’ and I think I might have lost the actual calendar now, whoops.
Hopefully I can cope with a two-part series though. At the time of writing, it might be a three-part series, I haven’t decided yet.
And if you hadn’t guessed, it’s all about gingerbread! Woo woo woo woo woo!
