Ho ho ho and Happy Easter. I hope everyone managed to have a nice long weekend despite the strange situation we currently find ourselves in.
I decided to cheer myself up and make Easter Bunny cupcakes! I had seen these when googling ‘Easter cakes’, and I thought they looked adorable.
I used a recipe from my Cupcake Jemma recipe book for both the cupcakes and the buttercream. I only made 6 cupcakes because the original recipe is for about 24 and I’m only one person! Despite my best efforts, I don’t think I could eat 24 cupcakes.
So I quartered the recipe and just made 6. I don’t know if they rose particularly well. But the buttercream recipe was aaaaamazing. So light and fluffy. It was a boiling hot day so perhaps I should have put it in the fridge for a bit before I used it, but hey ho.

The picture above shows the bunny with no ‘fur’, just buttercream. His eyes are a bit wonky… but maybe he’s just tired from delivering so many eggs.
The ears were made by cutting a marshmallow in half and dipping the cut side in some pink sugar. Good news; you only need the white marshmallows so you can eat the pink ones.
I didn’t have much luck sticking them to just the buttercream, so I popped a cocktail stick in each one and secured them that way.

These cupcakes require a HUGE amount of buttercream, or the bunnies look a bit flat. So I lumped my buttercream on, and then made the fur by sticking coconut flakes on top.
The eyes and nose are just made with fondant icing.
And then I took some pictures of the bunnies next to some little glittery carrots I’d ordered from Amazon.

And that’s it. Again I’ve learned lessons from this, and it’s a lesson I have learned before… don’t bake when it’s boiling hot and the flat is like an oven.
Despite melty buttercream… I do think these look cute and am awarding myself an ‘A’ for effort.

Now I have a whole bag of coconut flakes to use up though. OH, THAT’S CONVINIENT as there’s another recipe that needs them that I’d like to try out. So watch this space.
