Why can’t I make red velvet cakes?!

Red velvet cakesAfter many years in the wilderness, trying and failing to make red velvet anything, I thought I had succeeded thanks to a bake at home kit from Crumbs and Doilies!

I’m not kidding when I say I’ve tried to make various red velvet bakes about 100 times. Well, ok, 5 times. And every time, EVERY TIME, the bakes aren’t red. No matter which method I use, which recipe I use, which food colouring I use, I just get brown red velvet cakes. And brown red velvet cakes are a problem because they’re not red, and ergo can’t possibly count as red velvet cakes.

Pear butterfly cupcakes

One of my very dear friends gave me a cupcake book about 10 years ago, and I’m ashamed to say I haven’t made anything from it.

I’ve read it a lot and the pictures are beautiful, but I’ve never given anything a go. It’s an overlooked book in my collection.

Of course this needs to be put right so I picked the prettiest cakes and made them. They are pear butterfly cakes.

Sweet toothers unite: Hummingbird bakery caramel cupcakes

I’ve been feeling a bit up and down recently due to lockdown, but after speaking to several people I think that’s pretty normal at the moment.

The other night when I couldn’t concentrate on reading a book or watching a movie (and that’s saying something because I’ve just got Disney+ and it’s the best thing that’s ever happened to me), I decided to make some cupcakes.

Adventures in gingerbread – part two

A hint of mint

It’s more cupcakes on the blog this week! This week we’re baking from the Hummingbird Bakery’s ‘Cake Days’, and the recipe for these cupcakes comes from the Christmas section.

This is one of this recipes where a lot happened. There were ups, there were downs, there was a peppermint essence infused headache. Also I’m not a huge fan of candy canes to be honest, but they seem to be synonymous with Christmas.

Christmas cupcakes!

Ho ho ho and here we go; it’s  November so it’s nearly Christmas!

I flipping LOVE Christmas. It’s my favourite time of the year, and from October I’m ready and waiting to get Halloween out of the way so I can get excited about the build up to Christmas.

Apparently it’s not acceptable to be excited until Halloween is out of the way, which frankly is a shambles. I say when the shops start putting their Christmas stuff out, it’s fair game. I made these in October, because I don’t follow the rules.
