I made snowman cupcakes!

It was Christmas Eve babe, in the drunk tank kitchen…

And I made snowman cupcakes!

Yes I was baking away on Christmas Eve, because why not?

I’ve been at home for Christmas, eating too much and doing some baking, and it’s been very nice.

My Christmas content has slowed slightly as we’ve moved nearer to Christmas though. This is because I have a new job! And unfortunately I don’t get home very early in the evenings, so I have less time to bake.

And in the run up to Christmas my weekends have been taken up with other Christmas preparations, so I just haven’t really had the time.

I still have some Christmas things I want to make, but I might have to do them after Christmas. Technically, TECHNICALLY, the 12 Days of Christmas finish on 5 January so I’d be perfectly fine to be posting Christmas content until then…

Anyway, when I left my old job, one of my leaving presents was this cookbook from Lola’s Cupcakes, which I had actually had my eye on for a little while.

While looking at all the pictures, I saw the recipe for these snowman cupcakes and thought they’d be perfect for the blog!

The recipe is super easy, but because I didn’t read it properly I didn’t have one vital ingredient – soured cream. And by the time I realised, well, I just didn’t want to deal with a supermarket on Christmas Eve.

But I did have some dairy-free coconut yoghurt, and as these cupcakes have desiccated coconut on the top of them, I decided to go the whole hog coconut and replace the soured cream with the yoghurt.

It worked really well, and actually in the end you couldn’t really taste the extra coconut in the sponge.

Another thing I forgot (not sure I’m doing too well here) was some red laces or something to use as a scarf. So as a last resort, when I was passing a Marks and Spencer’s, I bought some vegetarian Colin and Connie the Caterpillar sweets to use.  They worked really well to be honest – I think if you’re going to use these, by Connie as those sweets worked a bit better. Also I had loads left which is a bonus. Lots of snacks.

For the snowmen’s heads I used white chocolate Lindor chocolates, and put them in the fridge until I needed them.

Then I bought some ready-to-write orange and black icing from Tesco, and started the best bit; making the snowmen’s faces!

Look at them all lined up, all smiley and ready to go. I’m so pleased with how they look!

Then I decorated the cupcakes with buttercream and made a little mound of it, dipped it in some desiccated coconut, made a little hole in the top for the head, and popped the scarf on. And here we have the finished product:

I LOVE THEM! The coconut on the icing worked really well, and the sponge was amazing. I mean, I’m just so chuffed with them. They’re snowmen!

My dad said: “Yeah, they were very nice, yeah.”

And my mum said: “Oh, tremendous! Such fun!”

Comparing them to the picture in the book, I don’t think I’m too far off…

I just want to keep posting pictures of them! They have made me so happy!

I’m making no promises, but as I said at the beginning of the blog, there are still some things I wanted to make, but haven’t got round to doing yet.
