I made Easter cakes!

Hello! I’ve been away for so long I forgot how to log on. But here we are, back again.

I’ve been away for a bit because I just couldn’t really deal with doing any baking to be honest – I think it was all anxiety related.

BUT, I made some cakes last week, for a cake sale that we did at work to raise money for Asthma UK.

Here is what I made…

A carrot cake

Pretty standard and I’ve shown you this before on the blog, but people like it. Plus it was an Easter themed bake off; bunnies eat carrots – maybe not the Easter bunny though because I think he probably just eats chocolate.

Brownies

I had a brownie fail with the first batch so I tried again, and I think these were ok. I ended up cooking them for about 40 minutes I think, and then I put everything on top afterwards. Because the brownies were still warm when I put the chocolate on top, it all melted into it and I think they looked really good!

I tried one and I was pretty pleased. This was a new brownie recipe, and historically I haven’t had too much success with brownies but, apart from having to adjust the cooking time, this seemed to work. I’d make them again.

A Mini Egg cake

I was probably most excited about this one – I saw it on Google when I was looking for fun cake ideas (something I do regularly) and I decided to make it!

It’s just vanilla sponge but the layers are (roughly) the same colour as the mini eggs! Here’s the cake batter before it went in the oven…

I used gel food colouring in this and it seemed to work – I was worried that when I was mixing it in I had knocked the air out, but they seemed to rise ok.

I then cut them with my cake leveller – I cut the pink one too small so I had to stick a bit back on, whoops… that’s what the white line in the middle of the cake is; my buttercream glue.

I was so pleased with those colours, I think the layers look really good! Here’s the outside – again I used gel food colouring to get the colours. I thought the yellow had come out a bit brighter than I had wanted, but actually I think it’s ok.

I think this was a good baking comeback. I wasn’t the only person who contributed to the bake sale, and we raised over ÂŁ200 in total!

So to celebrate here’s another picture of the Mini Egg cake – this was taken in my kitchen the night before the cake sale, and in the background you can just see the carnage going on; my cake leveller discarded to the side, a bowl and a plate stacked together, some cooling racks thrown on top of one another and some cake liners all piled up.

It did take quite a lot of equipment to make but it was worth it.
