I made a Guinness cake because I’ve got an iron deficiency

Yes, you read that correctly.

For the third time in my life I’ve been put on iron tablets, and I basically did nothing for the first two weeks of June because I was so tired. Obviously I am not eating enough spinach.

Anyway, there’s been a rumour flying around for years that Guinness is full of iron… I think it’s been disproved now to be honest.

Sweet toothers unite: Hummingbird bakery caramel cupcakes

I’ve been feeling a bit up and down recently due to lockdown, but after speaking to several people I think that’s pretty normal at the moment.

The other night when I couldn’t concentrate on reading a book or watching a movie (and that’s saying something because I’ve just got Disney+ and it’s the best thing that’s ever happened to me), I decided to make some cupcakes.

Adventures in gingerbread – part two

And just like that, we’ve made it to part two of the gingerbread series – a day I’m sure many of us thought would never come.

A hint of mint

It’s more cupcakes on the blog this week! This week we’re baking from the Hummingbird Bakery’s ‘Cake Days’, and the recipe for these cupcakes comes from the Christmas section.

This is one of this recipes where a lot happened. There were ups, there were downs, there was a peppermint essence infused headache. Also I’m not a huge fan of candy canes to be honest, but they seem to be synonymous with Christmas.

The saga of the apple streusel cake

**Bonus Christmas content alert that isn’t really Christmas content but there is a Santa emoji on the main picture so it still counts!**

On a whim one day, when looking through my Hummingbird Bakery Cake Days book (which has been, and will be, featured a lot during my Christmas content), I stumbled across a recipe for apple streusel cake.

I think this was one of those days where I wanted to make a cake to take to work, but I wanted something quite straightforward that wouldn’t take hours and didn’t need decorating.

I liked it because it looked a bit like apple crumble, and I don’t think you can go wrong with apple crumble.

Hummingbird Bakery: Banana and Cinnamon Muffins

I eat a lot of bananas, but I don’t really like them when they are baked into a cake, if I’m being honest.

When someone brings in a banana loaf, I’m usually not one of the first people in the queue to try it, which is very unlike me.  Usually if there’s a cake in the office I pipe up at about 10am asking if anyone’s going to have any. I think 10am is an acceptable time for cake.

The cake that almost never was

I made a cake for someone at work because he was leaving one department and going into another one. I wanted to make a drip cake with mini doughnuts on the top.

I had been so organised up to this point – the only thing left to do the night before the cake was due was the chocolate ganache for the drip and the mini doughnuts.

However, the drip part didn’t really work and I wasn’t happy with the cake. Maybe I’m too picky but I like things to look as good as possible! So anyway, here is what happened, via notes written on my phone throughout the experience, the evening before the cake was due and after chocolate ganache ruined my life…
