
And getting caught in the rain…
Then this blog is probably for you as these are Pina Colada cupcakes that I made on a rainy day! A rainy day while I was in lockdown.
Of course I did, I needed some sun in my life at such an odd (and rainy) time. And what better way to do that than to chuck a bit of rum in a cupcake?
As Captain Jack Sparrow once said; “Why is the rum always gone?”
Well my friend, it’s because it’s all in these cupcakes. There’s a fun pineapple and rum core. And rum in the buttercream! Oh yeah, and drizzled over the cupcakes as they’re cooling.
Thinking back on it now while I’m writing this, that is quite a lot of rum isn’t it.
And there’s coconut here, there and everywhere; in the batter, in the buttercream and sprinkled on the top.
These umbrellas are fun aren’t they?!
Anyway, this recipe is from my Lola’s Forever book, and I wanted to make it because I thought these seemed sunny and fun. And while we’re all going through this weird time, I think we all need some sunshine and some fun.
Hence taking some photos with these props I had bought from Amazon specifically for this cake; a weird palm tree model, some rubber flamingos and those fun umbrellas. And I think you’ll all agree, it looks fantastic:
The cake was good, but I’m not sure about the middle bit – it was very runny. I had thought it would be fairly thick?
Also I don’t know how I feel about cakes with coconut on the top, I think they look a bit messy and I’m not really a fan of that. I think cupcakes look better when there’s some form of order and neatness… I’m not very abstract!
I hope these made your day a little sunnier. And now you’ve finished reading this, I hope you feel inspired to go and listen to Club Tropicana by Wham!, put a Hawaiian shirt on and make a Pina Colada. Bonus points if you have an inflatable flamingo to dance with 🙂
