Cooking from my Calendar – January

When I bought a cake magazine just before Christmas, it came with a free calendar which has a recipe on each month. So this year I’ll be baking my way through the calendar…

January’s recipe is Cookie Kisses and I’m not going to lie, I really didn’t want to make this one.

Biscuits and cookies are not my strong point so I kept putting this off (as you can probably tell because it’s going up on the blog so late in the month).

The recipe says it makes 24 Cookie Kisses and that they should be about an inch round, but I think that’s wrong. I made my dough, weighed it out and divided it into 24, but when I put them on the baking tray they were double that size. I took 12 and cut them all in half to make more smaller cookies.

It also says cooking time is 6 – 8 minutes; well I don’t think that’s right either. They looked fairly pale still after 8 minutes, especially the bigger ones, so I left the smaller ones in for 10 minutes and the bigger ones in for about 14.

The raw cookie dough was quite nice… yes I did try some of it 😋

Anyway when they were cool I filled some with Nutella, some with vanilla buttercream and some with strawberry buttercream.

You know what? I had really low expectations when I started making these, but they were actually really really tasty. I think the smaller ones look more appealing; they just look really cute, so if I do make this again I’ll make half the quantity of dough and make 24 small versions.

The nuts in them offset the sweetness, and even though I didn’t think I’d like them I might end up keeping the recipe. So I think January’s recipe, aside from the portion issue, was a success!
