
I’m going to aim to post on here twice a month, but I have a few posts in draft from last year that are ready to go, so for the first couple of months of the year it might be a bit more than that.
Let’s kick off 2018 with one of those posts – I made these last year and they were the third of my Bakes Box kits. The second was a Smores kit that I didn’t end up posting on here, but I had a bit of a disaster with the marshmallow anyway. So, here we go – onwards and upwards into 2018…
My third Bakes Box arrived recently containing the recipe and ingredients for Fully Loaded Cookie Cups!
The cookie cups only take 8 minutes in the oven, then you mix up buttercream and put caramel and popcorn on the top. It really couldn’t be any easier, especially because all the dry ingredients are already measured out.
The main challenge was actually getting the cookie cups out of the tin… I had two casualties along the way that crumbled under the pressure so I possibly should have greased the tin better.
I also found that the recipe didn’t make enough buttercream to top all of the cookies, but then I am known for being quite liberal with buttercream so perhaps next time I need to rein it in a bit.
I don’t really have anything else to say about this bake, other that they were quick to make and very tasty so I’m keeping the recipe.
I really enjoyed these little parcels arriving in the post every month. The first three were a (brilliant) birthday present, and I’m debating subscribing for another three more months to see what else comes my way.
